  • Cut a small piece of the dough and begin rolling it with both hands to create a long rope, about as thick as your finger.

  • Using your chopper/scraper or a knife, begin cutting the rope into 1" (or so) pieces. They will look like little pillows.

  • Take a 1" pillow, and using either a knife tip, your pointer/middle finger, or your thumb, apply a little pressure to the pillow and begin pulling the dough back towards you until it fully turns over.

  • Remove your knife/finger slowly.

  • You can also use a gnocchi board to make your cavatelli.  Either lay it flat or hold it upright and apply the same techniques as in the instructions above.  If you hold it upright, the cavatelli should fall to the surface when done correctly.
