Shrimp Fra Diovolo

  • 1 cup brown rice
  • 1 lb raw shrimp peeled, deveined
  • 1 tsp red pepper
  • 1 tsp salt
  • 1 cup onion diced
  • 14.5 oz diced tomatoes canned
  • 1 cup white wine dry, crisp
  • 4 cloves garlic chopped
  • ¼ tsp oregano dried
  • 3 tbsp parsley fresh, chopped
  • 3 tbsp basil fresh, chopped


  • Cook the brown rice per the instructions. Set aside and keep warm. 
  • In a large bowl, season the shrimp with the salt and red pepper. Toss to combine. 
  • Heat 3 tbsp of olive oil in a medium sized pan. Add the shrimp. Cook for a minute or so on one side, flip and cook for another minute or 2 until just cooked through. 
  • Remove the shrimp from the pan, cover and keep warm. 
  • Add the onions and a little bit of olive oil and cook until soft. About 5 minutes. 
  • Add the wine and garlic. Bring to a boil and simmer for 2-3 minutes. Add the tomatoes and oregano. Cook everything for about 10 minutes. 
  • After 10 minutes, add the shrimp back. Cook for a minute and add the basil and parsley. 
  • Remove from heat and serve hot over the brown rice.
