Shrimp Fra Diovolo

1 cup brown rice 1 lb raw shrimp peeled, deveined 1 tsp red pepper 1 tsp salt 1 cup onion diced 14.5 oz diced tomatoes canned 1 cup white wine dry, crisp 4 cloves garlic chopped ¼ tsp oregano dried 3 tbsp parsley fresh, chopped 3 tbsp basil fresh, chopped
Cook the brown rice per the instructions. Set aside and keep warm. In a large bowl, season the shrimp with the salt and red pepper. Toss to combine. Heat 3 tbsp of olive oil in a medium sized pan. Add the shrimp. Cook for a minute or so on one side, flip and cook for another minute or 2 until just cooked through. Remove the shrimp from the pan, cover and keep warm. Add the onions and a little bit of olive oil and cook until soft. About 5 minutes. Add the wine and garlic. Bring to a boil and simmer for 2-3 minutes. Add the tomatoes and oregano. Cook everything for about 10 minutes. After 10 minutes, add the shrimp back. Cook for a minute and add the basil and parsley. Remove from heat and serve hot over the brown rice.
