Mexican Turkey Casserole with Green Beans Recipe

Let’s give this Mexican Turkey Casserole with Green Beans recipe a solid A+! I mean what’s better than a taco in a bowl??? Um...not much. Lots of different flavors, loaded with both green and pinto beans and we finished it off with some fire roasted tomatoes. WIN - WIN - WIN!

Instructions

  • Preheat oven to 400 degrees. 
  • Heat 2 tbsp of olive oil in the oven-safe skillet. Add the onions and green beans. Season with a little salt and pepper. Cook for 2-3 minutes until the beans start to get a little soft and the onions are translucent. Once done, remove from the skillet, cover and set aside until later.
  • Heat the remaining olive oil to the same skillet. Add the ground turkey and season with a little more salt. Cook, breaking apart occasionally, until browned.
  • Add the seasoning and mix all together.
  • Add the diced tomatoes and pinto beans and mix. Add back the cooked green beans too. Cook until heated through, about 1-2 minutes.
  • Add the crushed blue corn tortillas but do not mix. Then add the shredded cheddar cheese right on top.
  • Take the oven-safe skillet and place right into the pre-heated oven. Be sure to remove anything that is not oven-safe (like a silicon handle). Bake for 15 minutes or until the cheddar melts.  Serve hot in a bowl. 

Notes

  1. This recipe makes about 6 servings, so if you're a family of 4 and you and your spouse generally go back for 2nds, you may want to double up on this recipe, just to be safe.  We're a family of 4 and that's what we do and there are leftovers too!
  2. If you can't find any fire roasted tomatoes with green chilies, that's ok!  You can always just try and find the fire roasted tomatoes and buy 1-2 green chilies separately, dice them up and add them in.  You can also choose to leave the chilies out, or just use regular diced tomatoes too!
  3. When you're adding the tortilla chips in, just sprinkle them on top without mixing them all in.  If you want to keep them crunchier, than it's important that you follow this step.  If you don't care if they're a little softer, then you can definitely mix them all in with the rest of the ingredients after you add them in.
