Let's face it...homemade lasagna pasta makes your lasagna SO much better!
Homemade lasagna pasta or homemade lasagna noodles...whatever you call them you'll love how easy they are to make. Grab some eggs, some all purpose flour, and your pasta machine or rolling pin and fun making these fresh lasagna noodles.
Each time I made homemade pasta, I always seem to think about how easy it is to make the dough. Here's a rule of thumb you should follow when making egg pasta dough...1 egg for every 100 grams of flour (a little less than a cup). Follow that and you'll be golden...no pun intended...you know because the dough is kind of a golden color?!?

Let's make some homemade lasagna pasta!
Homemade lasagna is one of the easiest fresh pastas to make. Once you have your egg dough, it's really only a matter of flattening it out and if you want...cutting the edges with the fluted pasta wheel.
First, cut a small piece off of the large ball of dough.
Do you need a machine for homemade lasagna pasta?
You don't. But it is a lot easier and quicker with one. So if you have one, now's the time to break it out.
Starting on the lowest setting, run the piece of dough through the machine 3-4 times. You'll want to fold the dough in half before each time you run it through the first few times.
After 3-4 times through the machine, raise the setting one notch and run the dough through ONE TIME. Do not fold the dough.
Repeat this process, turning the dial one notch each time and repeat until you get to either the 2nd to last or the last notch on the machine (it depends on how thin you want your noodles).
The last notch really gets it thin, so if you think your dough is too sticky, just add some flour before running it through.
You should end up with a nice long, flattened piece of dough.
Finally, the finishing touch. Trim your dough to the size you want to make your noodle (you may have a really long sheet, which in this case, you can probably cut it into two separate pasta sheets).
Then, just take your fluted pasta wheel and trim the edges horizontally. Your sheets won't all be the same size, but typically lasagna pasta is about 10 inches long.
And that's all there is to it. Quick and easy homemade lasagna pasta!
If you have a pasta drying stand, go ahead and hang them up. If not, try and lay them out on a cookie sheet. They should take about 30 minutes to dry.

Do you have to boil fresh pasta for lasagna?
Absolutely not! You can if you want to, but it's not necessary. In fact, when I make my lasagna with homemade noodles, I never boil my pasta in advance. If you choose to, boil them for 2-3 minutes tops.
