I love everything about this Healthy Beef Stroganoff recipe! It’s so easy to make, we use only a few ingredients, and it’s super tasty!
We are not big meat eaters in this family, but when we do eat it, we do it right! We make this beef stroganoff recipe with tender, juicy filet mignon. Cut the meat into bite sized pieces and enjoy.
When it comes to the noodles, I use whole grain no yolk egg noodles. It’s great because with a dish like this, where we drown the noodles in the gravy, you can’t even taste the difference.
The beauty of the cast iron skillet is that it’s so versatile. I made this beef stroganoff by throwing my skillet right on the grill. Even had the side burner to boil the water for the noodles.
How to make Healthy Beef Stroganoff
- Cook the egg noodles per the instructions. Set aside.
- Heat the oil in a skillet, over medium/high heat. When oil is hot, add the meat and onion. Cook until meat is no longer pink and onion is tender.
- Stir in soup and paprika. Heat through.
- Stir in yogurt until warm.

- 2 tbsp olive oil
- ½ cup onion chopped
- 10.5 oz cream of mushroom soup canned
- ½ tsp smoked paprika
- ½ cup greek yogurt plain
- 1 lb egg noodles whole grain
- salt to taste
- pepper to taste
